THE HACHI SHOCHU, Sweet Potato (Imo), Mizunara Cask Matured is a collaboration with Ookubo Shuzo, a family owned farm distillery in Kagoshima and Hacchan who, somewhere along the way was also exposed to Whisky and the benefits of Cask Maturation. Made from Grilled Kogane Sengan and Anno Imo, a fluffy delicious variety of sweet potato with a lovely aroma and golden skin colour (Yaki Imo), Kuro (Black) Koji and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavors of the underlying ingredient, this Batch 5 has been matured for about 2 year and 7 months in Mizunara Oak to retain the flavour of the origin spirit while adding an extra dimension of complexity to  the nose, palate and finish. 

Mizunara Oak is unique to Japan and is infamously difficult to work with, given their grain structure which also makes it more prone to leakages but imparts very unique flavours that are not usually found in traditional bourbon and sherry barrels.

Color: Deep Gold Nose: Tropical fruits, incense, sandalwood, cedar and coconut with some subtle smoke balanced with sweet potato in the backgroud. Palate: Grated dry coconut, some banana and pineapple with a hint of oak spices, incense and sandalwood along with sweet potato flavours coming through at the back combined with subtle smoke.

Recommended way to Drink: Straight Up, On the Rocks or as a Highball (3 parts of sparkling water to 1 part The Hachi Shochu).

"Tamashii" is Soul  or Spirit in Japanese. Bottled by Mizunara for its 4th anniversary, matured in refill bourbon barrel. Subtle peat smoke, charcoal ash & earthy notes combined with sweet vanilla, honey, citrus and fresh tropical fruits like banana. Vanilla sweetness combined with a saltiness that finally gives way to peppery notes and spices such as cloves and hints of dark chocolate. Nice long and complex finish.

A limited release of 251 bottles worldwide with the label designed by a Japanese artist Kenro Shinchi. WhiskyFun rated 85 points (SGP 564) Extract "Mouth (neat): it’s really good, I’d almost call this ‘good thin peat’. Limoncello, oysters, ashes, riesling, mercurochrome ...With water: same, while the body got bigger rather than thinner once water’s been added. Comments: very good for sure, just rather ‘hesitating’."

We would highly recommend to add water to see how this whisky evolves beautifully with enhanced citrus and sweet mandarin notes combined with some baked tarts balanced with some minerality and saltiness. A very enjoyable whisky indeed.

The label captures the silhouette of a majestic Manta Ray made visible by the dark emerald and frigid pink clouds that emanate from its dotted pattern radiating in the colors of the marine environment it inhabits.

Whisky Fun Extract: Colour: mahogany. Nose: this is more old-school than the House of Lords. Not talking about the Scotch whisky. Prunes, old cognac, dates, chocolate, figs, whiffs of moss and old pine wood, a few mushrooms and a little liquorice, plus a few roasted nuts, especially pecans. Mouth: we're deeply reminded of some old Speyside malts by G&M. Like pre-war, bottled in the 1970s and 1980s. It is a time machine! More bouillons, chocolate, pipe tobacco, liquorice, truffles, puréed chestnuts, pears poached in Sauternes, very old Sauternes, very old Malaga… It is definitely very 'antique'. I would love to watch young whisky enthusiasts tasting this whisky, or similar whiskies, for the very first time. It would undoubtedly be a real revelation, as they are becoming so rare. Finish: rather long, rather sublime to tell you the truth. Comments: as I sometimes say, we could spend hours sipping a magnum of each to try, and fail to decide which one, between the Kinship and the Silver Seal, is our favourite. A Single cask selected by Mizunara, HK. The artwork by Saumya Bharati, an artist from India captures the essence of BALANCE in a partnership between M&H and Mizunara; in a marriage of casks between a 1st fill ex-bourbon barrel (char level 3) for 2 years and 10 months and a 1st fill ex-PX sherry hogshead (char level 3) for a further 5 months. Distilled from a single Concerto variety of unpeated barley (grown/malted in England), the cask was filled on 25/03/2018 at 64.5% ABV and matured in a natural environment at M&H’s Jaffa warehouse. Bottled at natural cask strength to retain the original flavours, we encourage adding water as per personal preference. Color: copper gold Nose: toffee, caramel and fresh pencil shavings Palate: sweet cinnamon, cloves, oak spices and black tea Finish: sour fruits and cocoa bitters at the end. This is a perfect Christmas Dram and matches very well with cakes, puddings, chocolates and the festivities!

"Sado - The Guest". This is a Single Cask (#129/2013) bottling exclusively for Mizunara, Hong Kong. Bottled in November 2020 with 254 bottles released, this has been matured in a fresh bourbon barrel for nearly seven years and then finished in a Pedro Ximenez hogshead for over ten months. A Nose of citrus fruits and raisins and a Palate of mixed fruits, salted caramel and dry spice with peat smoke at the back end, the Finish is long with rich fruits, lots of spices like cloves and cardamom along with dry smoke. 

This bottling represents a continuation of the story of SADO, from Mizunara's previous Single Cask bottling (767/2011 label focusing on the HOST) and this time around focuses on the GUEST, both of whom share mutual respect during a Japanese Tea Ceremony ("SADO"). The label for both the bottles were designed by Kenro Shinchi, an artist based out of Koshikishima Island in Kagoshima, Japan.
