A limited release for 2022, the Kilchoman Casado (Portuguese for marriage) is matured in fresh bourbon barrels for 6 years before 38 casks were married together for 2 years in two 6,000 litre Portuguese red wine vats. 

Nose: Smoke comes first and balanced with ripe stone fruits: peach, plum and cherry. Palate: Pepper and spice at first taste. Dry, salty peat smoke with apricot and lemon. Finish: Long finish with spices, the cooked fruit notes bring a sweet-jam balanced with Kilchoman smoke.

This is a Limited Edition of Machir Bay bottled at Cask Strength of 58.3% ABV using the same vatting recipe as the traditional Machir Bay bottling to appreciate the full power and character of Kilchoman's core range.

Nose: Opens with light, fruity notes influenced by our distillation. Being cask strngth, allows for intense waves of fresh green apple followed by candied tropical fruits. Lasting hints of dry, earthy peat smoke become the backbone for this  release. Palate: Noticeably power at cask strength allowing for a concentrated palate combining citrus notes of lemon and orange peel. As the whisky opens it reveals a dominant honeycomb-sweetness that makes way for a profile driven by milk chocolate, provided by a Bourbon-rich maturation. Finish: A slight cracking black pepper spice combined with nutmeg. The oily, rich texture of this whisky delivers an increasingly smoky influence. Triple Distillation helps to concentrate not only the alcohol in the whisky, but also helps create lighter, more fruity flavours. Having only two stills, we performed the final two distillations in our 3600 litre spirit still, separating the hearts from the heads and tails each time. This bottling has been matured in only the finest first fill bourbon barrels.

Nose: Rich honey and vanilla with hints of citrus and toffee. Palate: A delightful mix of rich vanilla bean and butterscotch, complemented by sweet citrus notes and a hint of pepper clove. Finish: A long and rich finish, leaving a memorable impression. (Tasting Note from Distillery)

The winter malt was inspired by the unique selection of New Zealand malts that we chose for our mashbill: Manuka Smoked Mal, Chocolate Roasted Malt, Toffee Malt, Laureate Distillers Malt. Then the distillery aged the Winter malt in only the finest first fill bourbon barrels.

Manuka Smoked Malt: The world’s only manuka smoked malt, offering a smooth, sweet smokiness.
Chocolate Roasted Malt: Specially roasted for Pōkeno, featuring delightful coffee and chocolate aromas.
Toffee Malt: Roasted at low temperatures and caramelized, imparting honey and toffee flavors.
Laureate Distillers Malt: A sweet and floral malt that enhances the overall profile.

This is in fact a doublewood. We have combined whiskies matured in first fill bourbon barrels and PX Hogsheads, into a PX hogshead for a marrying period of several months. 

Nose: An enticing aroma of citrus intertwined with rich, dark chocolate and dried fruit. Palate: A harmonious blend of flavors including black forest gâteau, complemented by the deep, luscious notes from the PX cask. Finish: A deep and lingering finish that leaves a lasting impression. 

Bottled exclusively for MIZUNARA at cask strength, this rich and complex whisky is a true testament to the craftsmanship of Pōkeno Distillery, perfect for those seeking a unique and luxurious drinking experience.
