THE HACHI SHOCHU, Sweet Potato (Imo), Mizunara Cask Matured is a collaboration with Ookubo Shuzo, a family owned farm distillery in Kagoshima and Hacchan who, somewhere along the way was also exposed to Whisky and the benefits of Cask Maturation. Made from Grilled Kogane Sengan and Anno Imo, a fluffy delicious variety of sweet potato with a lovely aroma and golden skin colour (Yaki Imo), Kuro (Black) Koji and single distilled under normal atmospheric pressure (making it a Honkaku Shochu) to retain the flavors of the underlying ingredient, this Batch 5 has been matured for about 2 year and 7 months in Mizunara Oak to retain the flavour of the origin spirit while adding an extra dimension of complexity to  the nose, palate and finish. 

Mizunara Oak is unique to Japan and is infamously difficult to work with, given their grain structure which also makes it more prone to leakages but imparts very unique flavours that are not usually found in traditional bourbon and sherry barrels.

Color: Deep Gold Nose: Tropical fruits, incense, sandalwood, cedar and coconut with some subtle smoke balanced with sweet potato in the backgroud. Palate: Grated dry coconut, some banana and pineapple with a hint of oak spices, incense and sandalwood along with sweet potato flavours coming through at the back combined with subtle smoke.

Recommended way to Drink: Straight Up, On the Rocks or as a Highball (3 parts of sparkling water to 1 part The Hachi Shochu).

We would highly recommend to add water to see how this whisky evolves beautifully with enhanced citrus and sweet mandarin notes combined with some baked tarts balanced with some minerality and saltiness. A very enjoyable whisky indeed.

The label captures the silhouette of a majestic Manta Ray made visible by the dark emerald and frigid pink clouds that emanate from its dotted pattern radiating in the colors of the marine environment it inhabits.

Whisky Fun Extract: Colour: mahogany. Nose: this is more old-school than the House of Lords. Not talking about the Scotch whisky. Prunes, old cognac, dates, chocolate, figs, whiffs of moss and old pine wood, a few mushrooms and a little liquorice, plus a few roasted nuts, especially pecans. Mouth: we're deeply reminded of some old Speyside malts by G&M. Like pre-war, bottled in the 1970s and 1980s. It is a time machine! More bouillons, chocolate, pipe tobacco, liquorice, truffles, puréed chestnuts, pears poached in Sauternes, very old Sauternes, very old Malaga… It is definitely very 'antique'. I would love to watch young whisky enthusiasts tasting this whisky, or similar whiskies, for the very first time. It would undoubtedly be a real revelation, as they are becoming so rare. Finish: rather long, rather sublime to tell you the truth. Comments: as I sometimes say, we could spend hours sipping a magnum of each to try, and fail to decide which one, between the Kinship and the Silver Seal, is our favourite. “佐渡 - 客人”。這是一款專為香港 Mizunara 裝瓶的單桶 (#129/2013)。這款酒於 2020 年 11 月裝瓶，共發行 254 瓶，在新鮮的波旁威士忌桶中熟成近七年，然後在 Pedro Ximenez 大桶中陳釀十多個月。柑橘類水果和葡萄乾的香氣，混合水果、咸焦糖和乾香料的香氣，尾部有泥煤煙熏味，餘韻悠長，帶有濃郁的水果、丁香和小荳蔻等多種香料以及乾煙熏味。

這款裝瓶代表了 SADO 故事的延續，來自 Mizunara 之前的Single Cask 裝瓶（767/2011 標籤側重於 HOST），而這一次側重於 GUEST，兩者在日本茶道中相互尊重（“SADO ”）。兩個瓶子的標籤均由日本鹿兒島越島的藝術家 Kenro Shinchi 設計。
